With football season upon us, and the excitement of opening our new restaurant, I recently went looking for creative new recipes. Yes, we will have the football package, and I’ll look forward to watching the faces of our guests, friends and family, when all our creativity and deliciousness meet! The following was inspired by Disney, and I encourage you to “Pass” these around for a “Touchown.”
• 1 1/2 pounds ground beef.
• 1 large egg, beaten.
• 1 cup bread crumbs.
• 1 cup onion, chopped finely.
• 1 tbsp minced garlic.
• 1 tsp Italian Seasoning.
• 1 tsp salt.
• 1/2 tsp freshly ground pepper.
• 1/4 cup shredded parmesan.
Place all the above in a large bowl and hand mix together. Be sure to incorporate the seasonings into all of the ground beef, without over mixing (over mixing will lead to a dry and tough meatball.) Now it’s time to shape your meatballs into a football shape. Place on baking sheet and bake at 350’ for 10-12 minutes.
Everyone has their favorite Marinara, whether it’s Mom’s or Grandma’s recipe…or perhaps your favorite jarred sauce. So choose your yummiest and heat it up….remember we’re running for that “Touchdown!”
Now, let’s put it together, and no “Interceptions” allowed here. Slice a small oblong, crusty Italian roll through the top to make a pocket for your “Football.” Place football into the pocket, spoon on some marinara, and then lay mozzarella strips over the top to create your laces. “Huddle” all your “Pigskins” together on a baking sheet, place in the oven at 350’ for about 3 minutes to melt the cheese slightly…we don’t want your laces to run together!
This is definitely a “Hall of Famer” and a must make for your next “Tailgate” party!
