The September 13th “Lunch Bunch” of the Marco Island Woman’s Club featured a cooking class with Chef Laura at CJ’s on the Bay. The menu consisted of spaghetti squash, green bean pesto, heirloom tomato and avocado salad, and ended with a honey peach sundae. Chef Laura shared with members how basicrecipes and cooking skills can be built upon to suit personal tastes. She explained that toasted almonds, walnuts or macadamia nuts can be substituted for pine nuts in the pesto recipe. Chef Laura also offered options of brandy, Grand Marnier, and Cointreau for the sundae’s sauce. After the class and luncheon, Chef Laura took members on a tour of the kitchen.
The Marco Island Woman’s Club, founded in 1966, holds several fundraisers throughout the year to provide scholarships to graduating high school students living on Marco Island and to support local charitable organizations. Marco
