Lemon Sea Trout With Capers

The January and February shallow water fishing season is all about speckled sea trout, and if you’re planning to take home dinner, there are plenty of incredible recipes you can use. One that is particularly simple and tasty is lemon sea trout with capers, which brings a little sunshine into our coldest weather season.

You’re going to want to start with two ½ inch thick sea trout filets, but if you’re cooking for more than two this can be adjusted as needed. Next, you’re going to want to gather together four tablespoons butter, one whole lemon, ½ teaspoon of pepper, and a four-ounce jar of pea-sized capers.

The first thing you want to do is melt the butter in your medium skillet, and once that butter is melted begin to add your lemon. Make sure to peel the lemon and finely chop the pulp before adding to your melted butter-coated hot pan. Next, season your sea trout filets with a little Captain Rapps’ Everglades City All Y’all Seasoning (available on website below), or a pinch of salt and pepper, and place into the butter and lemon hot pan, and sauté on medium heat until the meat of the fish begins to turn white. Don’t turn or flip the filets, and allow them to simply cook all the way through while laying on their original side.

When your fish is finished, it will lose all of its transparency and become flaky when disturbed with a fork. When finished, take your filets off of the heat, and place them on your plate to drizzle them

with the lemon butter drippings still left inside the pan. Sprinkle the fish with your capers and a bit of parsley, and you’re finished!

This recipe can be served with a whole host of different sides, and everything from asparagus or corn to French fries can work wonderfully to go along with your dish. Two sides that work particularly well with the recipe are fresh green beans and small red potatoes, as they really adapt to the flavors in the lemon butter well, while still holding their own as a side to the dish.
