FOLLOW THE FISH

Wahoo are dense and mild fish that are perfect to cook on the grill. We cook them so many ways at home, but so far the guest favorite has been this citrus grilled hot and sweet method. The orange flavor and mildly spicy heat seem to go perfectly on Wahoo! Get out there and catch up a nice Wahoo or pick some up fresh from your local market and give this super fast and easy recipe a shot… I’m sure you and your guests will love it too!
2 Wahoo Steaks –1 ¼” thick 1 cup orange juice 1 TBS Captain Rapps’ Hot and Sweet Orange Habernero Seasoning 2 limes 1 can black beans Olive oil 1 Onion 1 TBS chopped Garlic 1 Lime Salt and Pepper 1 package of yellow Spanish Rice
Place your Wahoo steaks in a zip top bag along with 1-2 cups of fresh squeezed orange juice. Let marinate in the fridge for about 2 hours.
I like to get my black beans and rice cooking while the Wahoo steaks are about 30 minutes from finishing up in their marinade. It’s easiest to purchase a bag of yellow rice that is seasoned and ready to cook. I find these in the Hispanic section of my local grocery store. Follow the stove top directions for best results.
For the black beans, I like to coarsely chop up a sweet onion and sauté it in a large pan on medium high heat with a couple of tablespoons of olive oil until golden brown. Next add a tablespoon of chopped garlic and sauté that for another minute. Then add your can of black beans, the juice of one lime, and salt and pepper to taste. Let simmer for about 5-10 minutes.
Remove the steaks from the marinade and sprinkle generously with the Captain Rapps Sweet/Hot Orange Habernero Seasoning. Let them sit for 10 minutes with the seasoning on them. Meanwhile light your grill and set it on medium high. Spray grill grates with a non stick cooking spray. Once the grill gets heated up, lay your Wahoo on and close the top. After about 5 minutes, rotate the steaks half a turn and close the top and let them cook another 5 minutes. Now flip them over and do the same thing (cook 5 minutes, rotate half a turn, cook another 5 minutes). Cook just until they flake with a fork. Slice limes and serve on top of the Wahoo steaks.
